Hello everybody, today I'm going to give you instructions for one of my favourite meals that I first had at school, in fact! This is 100% plant-based too and super delicious.
*Please note that this recipe leaves behind some avocado, so you could add an extra half bagel and 3 cherry tomatoes if you wish to use it all at once.
Ingredients
1 plain/sesame seed bagel
6 cherry tomatoes
1 small/medium sized avocado
1 tbsp mild/hot chilli powder
Salt
Pepper
Sweet chilli sauce
Garlic infused olive oil
Method
(1) Cut open your avocado and scoop the contents onto a plate.
(2) Mash the avocado either using a fork or potato masher. Try to make it as smooth as possible with minimal lumps.
(3) To your avocado, mix in your chilli powder with salt and pepper to taste.
(4) Chop the cherry tomatoes in half.
(5) In a pan, drizzle on some garlic infused olive oil and place in your tomatoes, flat side down. Cook the tomatoes on low-medium heat on your hob until the curved top starts to soften. This should only take 2-5 minutes, but make sure you keep an eye on them so they dont burn.
(6) While the tomatoes are cooking, cut the bagel in half and toast to your preference either in a toaster or on a grill.
(7) Remove the tomatoes and get ready to assemble.
(8) On each half of your bagel, spread a generous helping of your chilli avocado. Then add your tomatoes and drizzle on the sweet chilli sauce.
(9) Enjoy!
This recipe also works for avocado toast, but I personally prefer the thickness of the avocado with the bagel, as it also takes the tomato juice far better.
